Ingredients

  • 2 ½ cups Captain Crunch Cereal
  • 3 large Eggs
  • 1 teaspoon Vanilla Extract
  • ¼ cup Whole Milk
  • ½ teaspoon Ground Cinnamon
  • 6 slices Whole Wheat Bread
  • Butter or Margarine for cooking

Instructions

  • In a medium sized bowl beat the eggs, vanilla, and milk with a fork until they are well combined and runny. Set aside.
  • Pour the cereal into a ziplock bag, seal and smash with a rolling pin. Get that anger out and smash the cereal to however fine of a texture you desire. Add in the cinnamon and mix. Pour onto a plate and set aside.
  • Heat a large frying pan over medium-low heat and melt a generous amount of butter or margarine into the pan.
  • Coat each piece of bread evenly on both sides with the egg mixture and then coat it with the captain crunch crust. Place the coated bread into the greased pan in a single layer and cook for approximately 4 minutes on each side or until golden brown and crispy.
  • Top with maple syrup, berries, whipped cream or caramel. Store for up to 4 days in the fridge or up to 6 months in the freezer.
