There's no need to miss out on your favourite game day snacks when you're on a Keto diet, so why not serve up these Keto Bell Pepper Nachos at your Super Bowl party--even if its a party for one. Loaded with taco beef, Jalapeños, black olives, green onions and smothered with cheese. Thats one delicious pile of awesomeness with only eight grams of net carbs per serving!
What makes these keto nachos so amazing?
What doesn't make these keto nachos amazing is the real question here. Super cheesy? Heck yes! Loaded with delicious topp--I mean, need we say more than super cheesy? The promise of all the cheese had us sold in seconds. If you've been following the Keto diet for some time you'd probably understand that sometimes being on a special diet can become repetitive and boring, making you really miss the old foods you used to enjoy. Especially when it comes to special events, holidays and celebrations. Well, we've got you covered for Super Bowl weekend at the very least. Though, be careful, because we guarantee it won't be easy to stop yourself from eating the entire plate full (don't worry, we aren't judging if you do).
Like many nachos, these serve as a blank canvas. So, feel free to go nuts on whatever kind of toppings you desire as long as they are keto approved, of course! Though, if you're here because you're a bell pepper loving odd-ball, we won't stop you from adding non Keto toppings.

Keto Bell Pepper Nachos
Ingredients
- 4 large Bell Peppers
- 1 tablespoon Olive Oil
- 1 cup Groud beef
- 3 tablespoon Taco Seasoning
- ⅛ cup Water
- ⅛ cup Black Olives
- ¼ cup Pickled or fresh Jalapenos sliced
- 1 cup Cheddar Cheese shredded
- Green onion garnish
Instructions
- Preheat oven to bake at 420 F, preferably convection if you have it. Cut up the bell peppers, drizzle and coat evenly with olive oil. Place bell peppers in a single layer on a parchment lined baking sheet. Bake in oven for 15 minutes or until the skin of the peppers begins show have black patches. Don't worry this doesnt mean they are burnt!
- While the peppers cooking in the oven, prepare the rest of your ingredients. In a non stick frying pan cook the ground beef on medium high until the red/ pink pieces are almost gone. Do not drain the fat. Add in the water and taco seasoning and continue to cook while tossing the ground beef. Remove from heat when the liquid in the bottom of the pan has disappeared.
- When peppers are done remove them from the oven and arrange them into a pile on the baking sheet. Top with cooked ground beef, jalapenos, olives (or any other ingredients you choose) then top with the shredded cheese. Place back in the oven and bake again for another 10 minutes or until the cheese has completely melted. Let cool and top with green onions.
